Ingredients
  • 5 kg Beef brisket
  • 25 g Sugar
  • 45 g Salt
  • 20 g Pepper, freshly ground
Preparation
  1. Preheat the grill in the Standard position for 5 minutes at the medium level, keep the lid closed.

  2. Get all of the ingredients ready.

  3. Trim the beef brisket, i.e. cut the fat and tendons away from the meat. It can also be ordered from the butcher like this.

  4. Mix the sugar, salt and pepper together well and spread it over the beef brisket.

Cooking
  1. Place the beef brisket onto the preheated grill and connect it to the core temperature gauge.

  2. Reduce the temperature and continue to work with just the small burner.

  3. Close the lid and grill the meat at 100 °C for approximately 12 hours until a core temperature of 92 °C is reached.

  4. Turn off the grill and leave the meat to rest.

  5. Grilling

Tip
  • Make sure that your gas bottle is full, as the meat is on the grill for a very long time.
